Wheat & Gluten Free Muesli Cookies
Ingredients
- 3 cups Healtheries Simple Apricot & Coconut Muesli
- 1 cup Rice Flour
- 1/2 tsp Baking Soda
- 1 cup Brown Sugar
- 1 tsp Ground Cinnamon
- 125g Butter, softened
- 1 Egg
Method
- Preheat oven to 180°C.
- Combine the muesli, rice flour, cinnamon and baking soda in a bowl.
- In a separate bowl, beat the butter and sugar until creamy.
- Add the egg and beat well.
- Pour dry ingredients into the butter mixture. Stir to combine.
- Grease or line biscuit trays with baking paper.
- Place tablespoons full of mixture onto the trays. Flatten slightly with the palm of your hand.
- Bake for 15 minutes or until edges are cooked but centres are still soft.
- Transfer to a wire rack to cool. Store in an airtight container.
