Wheat & Gluten Free Muesli Cookies

Method

  1. Preheat oven to 180°C.
  2. Combine the muesli, rice flour, cinnamon and baking soda in a bowl.
  3. In a separate bowl, beat the butter and sugar until creamy.
  4. Add the egg and beat well.
  5. Pour dry ingredients into the butter mixture. Stir to combine.
  6. Grease or line biscuit trays with baking paper.
  7. Place tablespoons full of mixture onto the trays. Flatten slightly with the palm of your hand.
  8. Bake for 15 minutes or until edges are cooked but centres are still soft.
  9. Transfer to a wire rack to cool. Store in an airtight container.
