Chocolate Mint Brownies
Ingredients
- 1⁄4 cup Abundant Earth Organic Break Cocoa Powder
- 3 egg whites, large
- 1⁄2 cup sugar
- 1⁄2 cup plain flour, sifted
- 1⁄2 teaspoon baking powder
- 1⁄2 cup low-fat milk
- 1 teaspoon canola oil
- 1 teaspoon vanilla essence
- 1 teaspoon peppermint flavouring
- 1/3 cup chocolate chips
- 1⁄4 cup raisins
- 1⁄4 cup dates, sliced
- 2 tablespoons sunflower seeds
Instructions
Preheat oven to 350°F (175°C). Spray a 9x5-inch non-stick loaf pan with non-stick cooking spray.
Whip egg whites until light. Add sugar, Organic Break Cocoa Powder, flour, baking powder, milk, oil and vanilla essence.
Mix with an electric mixer on low speed until thoroughly mixed Add peppermint flavouring, cocoa chips, raisins, dates and sunflower seeds. Mix by hand to combine.
Pour into pan. Bake 30 to 40 minutes or until knife inserted in centre comes out clean. Remove from pan and cut into bars or squares.
