I've made significant gains in weight by taking creatine, but how much of this would be muscle as opposed to water?


Creatine does contribute to weight gain through its ability to draw and hold water into the muscle cells. However, creatine should also have helped to intensify your workouts, leading to greater stimulation of muscle growth through greater and more consistent progressive overload.
 
While without analysing your body it would be impossible to say how much of your gains are water and how much increased muscle through hypertrophy and hyperplasia, you could be confident that their would be en element of both in those gains.
