Can I add Perfect Protein to my cooking and hot drinks?
It is okay to use a small amount of Perfect Protein in some of your baked foods as long as you don't mind losing some of the specific functional qualities of the protein. We normally recommend replacing no more than 25% of the flour content with protein powder in baked foods, as any more can create a dry texture.
Whey Protein Concentrate is not suitable for use in 'hot' drinks, but can be used in 'warm' drinks. Aussie Bodies Perfect Soy Protein however can be used in all cooked or hot foods, as the protein structure is more stable when heated.
Heating whey proteins causes irreversible structural changes. Although these structural changes do not compromise the amount of digestible protein available to the body to any large degree, it does mean that the functional properties of the protein are lost.
Many of the proteins present in whey are not only superior dietary nutrients, but can also act on the body to perform physiological functions. Whey proteins have demonstrated varying functions including; immune stimulation and modulation, anabolic growth stimulation, gut healing properties and stimulation of glutathione, the body's powerful antioxidant and detoxifier. These actions exist due to the particular folding patterns that exist in proteins. When denatured by heat, these folding patterns are altered and their corresponding actions are lost. The remaining protein is still a superior source of protein for supplementation. Using egg white as an example, we see that just because we denature the albumin (when it goes from transparent to white), it does not become any less a quality protein for nutritional purposes.
If at all possible, it is best that you consume your Perfect Protein cold, but if you want to add quality protein to your cooking it may be best to use Perfect Soy Protein.
