Christmas Cookies

Makes 24 cookies
100g organic macadamia nuts
100g organic dried apricots
250g organic unsalted butter
1 cup brown sugar
˝ cup caster sugar
2 tsp vanilla essence
2 free range organic eggs
2 cups organic plain flour
˝ tsp bicarbonate of soda
1/2 cup organic raisins
˝ cup organic chocolate bits (optional)
2 ˝ cups Abundant Earth Organic Puffed Rice
- Pre-heat oven to 180c and line 2 oven trays with baking paper.
- Roughly chop macadamia nuts and place in large mixing bowl.
- Roughly cut apricots with scissors and add.
- Also chop the chocolate and add.
- Chop butter and place in a separate mixing bowl. Beat until soft and creamy.
- Add brown and caster sugars and beat until the sugar has dissolved.
- Add vanilla essence and eggs; beating well between each addition.
- Measure 2 tablespoons of mixture to form a biscuit and shape into a round form.
- Place on tray 8cm apart to allow for spreading.
- Bake 10-12 minutes.
- Remove cookies from tray and stand on a wire rack until cold.
- For lovely small tasty gifts, stack 3 cookies on top of each other and wrap with a Xmas ribbon.
