Tomato Gazpacho
Ingredients
- 2 cans (15oz) diced tomatoes (do not drain)
- 1 medium onion, chopped
- 1⁄4 cup red wine vinegar
- 3 tablespoons extra virgin olive oil
- 1 medium cucumber, peeled, seeded and finely chopped
- 1 medium red capsicum, seeded and finely chopped
- 2 teaspoon Abundant Earth Garlic & Parsley Seasoning
Instructions
Place all ingredients except the cucumber and capsicum in a blender or food processor. Puree until creamy. Place in a serving bowl. Mix in cucumber and capsicum. Chill for 2 hours and serve.
